Cashew Mayo

Ingredients:

1 cup raw cashew nuts

1 tablespoon lemon juice

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Pinch of salt

270-300ml filtered water

 

Soak cashews for 30 min in hot water or just for 5 min in boiling water.

Rinse well and add to blender.

Add the remaining ingredients and blend until very smooth.

Add more water if the consistency is too thick.

Add more lemon juice if you prefer a sour taste.

Add more vinegar if prefer a tangier flavour.

Store in airtight glass container for up to 6 days.
