Vegetable Skewers

Ingredients:

300g organic potatoes

200g organic carrot

200g butternut squash

½ tablespoon kombu powder

½ tablespoon lemon juice

½ tablespoon garlic powder

1 tablespoon onion powder

 

Wash potatoes and cut into 2 cm cubes (don’t peel).

Wash carrots and cut into the same size (again, don’t peel).

Wash squash and spoon out the middle part out. Cut into the same size cubes (again, don’t peel).

Add all cut veggies into a bowl, then add all dry ingredients and massage to combine.

Stick the vegetables onto a skewer in the same order, and bake in a preheated oven on 190 C for 35 min.

Serve with homemade ketchup (recipe below).

 

Ketchup

Ingredients:

100g tomato purée

½ apple

1 teaspoon lemon juice

1 teaspoon raw honey

1 teaspoon garlic powder

1 tablespoon onion powder

1 teaspoon dried oregano

Pinch chilli (optional)

100ml broth

 

Add all ingredients into a blender and blend 2-3 min, until very smooth.

You can add more broth, depending on the texture you prefer.
